Moist and yummy cake. Applesauce is used instead of oil. Some of the sugar is replaced with Splenda. Eggbeaters instead of eggs help lighten up this recipe.

Recipe Ingredients for Choc Zucchini cake

2 cups flour
1 cup sugar
3/4 cup splenda
1/2 cup applesauce
1/2 cup butter
2 cups zucchini
1/2 cup egg beaters
1/2 cup 1% milk
1 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
4 tbsp cocoa powder
12 oz semisweet chocolate chips

Recipe Directions for Choc Zucchini cake

Cream sugars, butter, applesauce and egg. Add milk and vanilla. Sift dry ingrediants together. Mix into wet ones. Add 2 cups finely diced/shredded zucchini to mix. Pour into 9x13 greased pan. Sprinkle with choc chips. Bake at 350 degrees for 35-40 min or longer until toothpick comes out clean.
