Perfect for parties or snacks, etc. A much lower version of the ones you would buy in the shops, and nicer, too, if I may say so!

Recipe Ingredients for Choc chunk crumble muffins

290 g plain flour
22 g brown sugar
25 g light margarine
2 tsps baking powder
1/2 tsp bicarbonate of soda
2 eggs
75 g caster sugar
3 tbsps lemon juice
2 tbsps cocoa powder
150 ml skimmed milk
111 g chocolate
2 tbsp sunflower oil

Recipe Directions for Choc chunk crumble muffins

Rub 25g of flour, 25g butter and 22g brown sugar together to make a crumble. Put aside, after pre heating oven to gas 6/200degrees c. Sieve remaining flour, bicarb, cocoa powder and baking powder together. Mix eggs, sugar, lemon juice, milk and sunflower oil together before pouring into the flour to make a lumpy batter. If it is quite thick add a few extra drops of lemon juice or water. add chocolate, mix well. pour into bun cases and sprinkle crumble over. Put in oven for 15-20 minutes (I find 15 is better as they are smaller than the original recipe suggested they should be, in fact they are a 3rd of the size, but also a 3rd of the calories). Leave to cool. Are scrummy eaten hot or cold.
