Chix Fettuccine Alfredo Recipe

My homemade chicken fettuccine alfredo with broccoli and mushrooms.

Recipe Ingredients for chix fettuccine alfredo

4 tbsp. butter
4 tbsp. basil
3 tbsp. salt
2 tbsp. black pepper
1 lb. chicken breast
4 tbsp. chopped garlic
12 oz. mushrooms
2 cups Parmesan cheese
2 cups fat free half and half
2 cups broccoli
1 lb. fettuccine

Recipe Directions for chix fettuccine alfredo

  1. Preheat oven to 350.

  2. Dice chicken into large bite sized chunks.

  3. Add 1 Tbsp. salt, 2 tbsp. garlic and 2 tbsp. basil to chicken in baking dish.

  4. Bake chicken about 30 minutes while you prepare the veggies, sauce and pasta.

  5. Saute' mushrooms and 2 tbsp. garlic in 4 tbsp. butter.

  6. Add Parmesan cheese until well blended.

  7. Add 1 tbsp. black pepper.

  8. Slowly whisk in half and half and keep stirring frequently.

  9. Bring Large pot of water to boil with 1 tbsp. salt and add pasta and chopped broccoli.

  10. Boil until pasta is al dente and drain.

  11. Return pasta and broccoli to large pot, add chicken hot from the oven and pour on sauce with mushrooms once thickened to desired consistency.

  12. Mix well and serve hot.
