Recipe Ingredients for Chive and Cucumber Vichyssoise

1 T oil
2 1/2 cups sliced leeks (white and pale parts only) (about 3 leeks)
2 1/2 cups water
3 small russet potatoes
1/2 cup low fat buttermilk
1 1/3 cup diced cucumber (1 large)
1 cup chopped fresh chives
1 cup chopped fresh dill
3 large radishes, cut into matchsticks

Recipe Directions for Chive and Cucumber Vichyssoise

  1. Saute leeks and oil for about 5 min, until leeks are bright green and tender.

  2. Add water and potatoes and simmer until potatoes are soft, about 20 min.

  3. Remove from heat and add buttermilk, cucumber, chives and dill. Allow to sit for about 5 min.

  4. Using an immersion blender or a regular counter top blender, process soup until it is smooth and thick.

  5. To serve chilled, place in fridge for at least 4 hours. Garnish with radish matchsticks.
