Recipe Ingredients for Chips for Fish and Chips

10 ounce potato
1/4 cup corn starch
2 teaspoons canola oil

Recipe Directions for Chips for Fish and Chips

  1. Trim the potato in the shape of a rectrangle. Cut into 1/4 inch slices and then into 1/4 inch fries. Put in a bowl of water and soak for at least 1 hour.

  2. Blanch the fries in 340 degree oil. Cook 3 to 4 minutes and remove to a sheet tray lined with paper towels.

  3. Turn the heat up to 375. Toss the potatoes lightly in cornstarch. Fry potatoes again, until fries are a deep golden brown.

  4. Sprinkle with sea salt.
