My favorite resturauant's famous side dish....lightened up!

Recipe Ingredients for Chipotle's Cilantro Lime Rice

1 cup basmati rice
1/8 cup lime juice, fresh
2 cups water
3 tbsp fresh chopped cilantro
4 tsp vegetable oil (olive is fine)

Recipe Directions for Chipotle's Cilantro Lime Rice

  1. In a small heavy pot, add rice, water, 1 tsp oil.

  2. Boil on high until most of the water evaporates.

  3. When the water just skims the top of the rice, reduce to low and cover about 15 minutes.

  4. Shut off and keep covered an additional 5 minute.

  5. In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.

  6. Makes 4 (3/4 cup) servings
