YUM!!! Very satisfying. spicy taco salad. This recipe is a single serving. I took a small can of corn and a 15 ounce can of black beans and divided it into 4 servings to arrive at the grams below.

Recipe Ingredients for Chipotle Taco Salad (meatless)

80 grams Lettuce
63 grams canned corn
61 grams canned black beans
14 grams fat free cheddar cheese
73 grams tomatoes (6 cherry tomatoes)
10 grams Tostitos chips, crushed
6 tbsp picante sauce
2 tbsp light sour cream
1/2 tbsp chipotle pepper
1/2 tbsp adobo sauce

Recipe Directions for Chipotle Taco Salad (meatless)

  1. Mix sour cream, adobo sauce and chipotle pepper together.

  2. Toss with remaining ingredients.
