Recipe Ingredients for Chipotle Sweet Potato Soup

5 cloves garlic
2 t fresh ginger
2 medium onions
2 sweet red peppers
3 stalks celery
3 large carrots
2 t brown sugar
1 1/2 t chili powder
1 t chipotle peppers
3 lbs sweet potatoes
8 c vegetable stock
1/4 c lime juice

Recipe Directions for Chipotle Sweet Potato Soup

  1. To make the soup, spray a little olive oil in the pan and place over medium heat. Add the garlic, ginger, onions, peppers, celery, carrots, season with salt and pepper to taste, and sauté, stirring, until the vegetables are brown, about 6 minutes. Stir in the spices, sugar, chipotle puree and 1 c of stock, and cook over medium heat until the mixture is reduced by about three-fourths, approximately 6 minutes. Add the sweet potatoes and remaining stock and simmer until the potatoes are very soft, 20 to 30 minutes.

  2. Using a hand blender or food processor, puree the soup mixture. Add the butter to thicken the soup slightly. Stir in the lime juice and correct the seasonings.
