A spicy and very satisfying way to enjoy both chicken and sweet potatoes. My dinner guests love this dish. Can use thighs rather than breasts for moister chicken.

Recipe Ingredients for Chipotle-Glazed Roast Chicken with Sweet Potatoes

16 oz Fresh Boneless Skinless Chicken Breasts
20 oz Sweet Potato
2 tbsp Chipotle Peppers
2 clove Garlic
2 tbsp Honey, Strained Or Extracted
2 Tablespoon Cider Vinegar
0.75 tsp Salt
1 tsp Cumin
0.5 tsp Cinnamon, Ground
1 tbsp Olive Oil
1 serving, raw Cilantro

Recipe Directions for Chipotle-Glazed Roast Chicken with Sweet Potatoes

Preheat oven to 400F. In a medium bowl, toss the cubed sweet potatoes with the oil then scatter them on the bottom of a roasting pan roast for 15 minutes. In a small bowl, mix chiles, garlic, cumin, cinnamon, honey, salt, and vinegar to make a paste. Rub the paste over each breast piece. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked, around 20-30 minutes. Serve garnished with chopped cilantro.
