THIS IS AN ENTIRE MEAL, a hearty dish packed with flavor and low in fat. Recipe makes a TON, about 10 servings of a little over 1 cup. Serve with rice.

Recipe Ingredients for Chipotle Chicken Stew

42 oz Boneless, Skinless Thighs
16 oz Corn, Sweet, Yellow
30 oz Diced Tomatoes
6 oz Tomato Paste
30 oz Black Beans
1 medium White Onion
27 3/5 grams Garlic
3 tbsp Oil Olive Extra Virgin
4 oz Chipotles

Recipe Directions for Chipotle Chicken Stew

  1. chop (1-2 in. dice) and brown approximately 2.5lbs of chicken breast or thigh meat, on high heat, in olive oil with the one whole white onion and chopped garlic.

  2. add 2 14oz cans of diced tomatoes (with liquid) and (1/2-1whole) 6 oz can of chipotle chilies in adobo sauce (available in the Hispanic foods section of the grocery store) and a six ounce can of tomato paste. Stir in ground cumin and chile powder (optionally) to preference.

  3. Add 1lb bag of frozen corn, 2 15 oz cans of black beans and 6 oz can of sliced ripe olives.

  4. reduce heat to simmer and cook for at least 30 minutes.

  5. Serve over steamed rice and top with shredded cheese and sour cream if desired. Garnish with a few tortilla chips.
