Southwestern Chipotle flavored POrt Shoulder

Recipe Ingredients for Chipotle Braised Pork Shoulder

96 oz Pork Roast
1 medium raw Onion Yellow
2 tbsp Olive Oil
4 clove Garlic
2 pepper Pepper, Ancho, Dried
1.5 cup Petite Diced Tomatoes
1/4 tsp Cumin
4 dash Salt, Table

Recipe Directions for Chipotle Braised Pork Shoulder

Remove fat cap from roast. Salt and Pepper. Braise on stovetop with 1-2 tblsp Olive oil. Remove from heat let rest in oven safe pan. Sweat onion, garlic on stove top. Add sweated veg and all other ingredients including 2 whole cloves (spices) to oven safe pan with roast. Cover with foil, bak 2-3 hours until meat is falling off bone. Shred, return to leftover liquid and let shreded meat absorb flavor more overnigh. Serve hot or cold. Good in Tacos, sandwiches, baked potatoes, etc.
