can be made with chocolate chips instead of butterscotch chips (but better with butterscotch)

Recipe Ingredients for Chip Toffee Bars

1/2 cup shortening
4 oz. brown sugar (3/4 cup, packed)
1 egg
1/2 tsp. vanilla
1 cup flour
1/2 tsp. baking soda
1/4 tsp. salt
1 cup butterscotch chips
2 oz. chocolate chips

Recipe Directions for Chip Toffee Bars

  1. Preheat oven to 350 F (180 C).

  2. Cream the shortening and brown sugar.

  3. Add egg and vanilla. Mix well.

  4. Add flour, baking soda and salt. Mix well.

  5. Add butterscotch chips. Mix well.

  6. Spread batter in a greased 8x8" baking pan. (or double quantities and use a 9x13" pan)

  7. Bake for 30-35 minutes, or until a toothpick comes out clean.

  8. Sprinkle chocolate chips over top of squares, and return to oven for 1 minute to soften the chocolate.

  9. Spread the chocolate over the top of the squares to "frost" them.

  10. Let cool in the pan.

  11. Cut into squares once cool. (I got 36.)
