Recipe Ingredients for chinese vegetables with omelet

2 tbsp water
2 tbsp reduced sodium soy sauce
2 tsp cornstarch
1 tsp white wine
4 oz lite tofu
1/3 cup olive oil
2 oz dried tofu
2 oz chives
4 oz baby spinach
1 cup veg broth
3/4 tsp salt
6 scallions
4 oz bean sprouts
3 eggs

Recipe Directions for chinese vegetables with omelet

  1. Mix 1T water, 1T soy sauce, 1t cornstarch and white wine. Add bean curd and let marinate for 10 min. Stir in 1T oil. Chop soaked dried tofu into short lengths.

  2. Rinse chive and spinach thoroughly and dry well. Chop.

  3. Heat a large wok. Add 3T oil. Stir-fry tofu - 3 min. Remove from wok and set aside. Stir-fry chive and spinach - 3 min. Remove from wok and set aside.

  4. Add 1T oil and stir-fry scallions until lightly browned. Add bean thread, veg stock, remaining soy sauc and 1/2 t salt. Simmer until sauce has reduced. Add bean sprouts. Cook 3 min. Add bean curd mixture. Transfer to a serving dish.

  5. Beat eggs with remaining water, cornstarch, and salt until frothy

  6. Heat remaining oil. Pour in beaten egg mixture. Cook until light golden brown on underside. Use a large patula to flip and cook until golden. Drape over the top of hte serving dish. Serve hot.
