A light side dish or starter course for a Chinese meal

Recipe Ingredients for Chinese vegetable soup

4 cups low sodium vegetable broth
1 cup broccoli
1/2 cup carrot
1/4 cup mushrooms
1 tbs ginger
1 tsp garlic
1 tbs tamari
10 ounces extra firm tofu

Recipe Directions for Chinese vegetable soup

  1. Bring broth to a boil. Add ginger (sliced in circles) and garlic (1 big clove halved), cover and remove from heat. Allow ginger and garlic to steep for 10 minutes, then remove from broth.

  2. Bring broth back to a boil. Add tofu (cut in small cubes) and mushrooms t(if using dried, allow them to plump before adding anything else). Add carrots and simmer for 2-3 minutes. Stir in tamari. Add broccoli and simmer for 1 minute.

  3. Serve immediately. May be garnished with fresh sliced green onions.
