This is an easy version of a traditional Asian salad. Add 8 ounces of diced cooked chicken if you like.

Recipe Ingredients for Chinese Vegetable Salad

4 cups sliced Napa cabbage
1 cucumber
2 carrots
4 oz sliced water chestnuts
6 oz Chow Mein noodles
1/3 cup rice vinegar
1 tablespoon sesame oil (optional)
2 tablespoons sesame seeds (optional)
1/3 cup sliced almonds (optional)

Recipe Directions for Chinese Vegetable Salad

  1. 1. Wash the cabbage, cucumber, and carrots.

  2. 2. Slice the cabbage into strips about inch wide by 3 inches long.

  3. 3. Cut cucumber into bite-size pieces, about inch.

  4. 4. Shred carrots using a cheese grater.

  5. 5. Chop the water chestnuts.

  6. 6. Place cabbage, cucumber, carrots, and drained water chestnuts into a large bowl.

  7. 7. Combine rice vinegar, sesame oil, sesame seed, and almonds in a small bowl to make the dressing.

  8. 8. Pour dressing over vegetables and toss.

  9. 9. Mix Chow Mein noodles into the salad right before serving.
