Recipe Ingredients for Chinese: Stir Fried Tofu with Veggies

12 oz. extra firm tofu, pressed dry and cut into small cubes
3 T. soy sauce
1 T. rice vinegar
1 T. honey
1 tsp. oriental sesame oil
1/4 tsp. dried crushed red pepper
1 T. cornstarch
2 T. olive oil
6 oz. fresh shiitake mushrooms, sliced (can substitute baby portabella)
2 medium zucchini, halved lengthwise and sliced into half moons
1 T. ginger root, julienned
3 cloves garlic, minced
3 green onions, julienned

Recipe Directions for Chinese: Stir Fried Tofu with Veggies

  1. Whisk first 5 ingredients in medium bowl to blend. Add tofu and stir to coat; let marinate 30 minutes or more. Drain, reserving marinade in small bowl. Whisk ╝ cup water and cornstarch into marinade.

  2. Heat 1 T. oil in large nonstick skillet over medium-high heat. Add tofu and sautÚ until golden, about 3-5 minutes. Using slotted spoon, transfer tofu to plate.

  3. Add remaining 1 T. oil to skillet. Add mushrooms and zucchini and stir-fry until tender, about 2-3 minutes. Add garlic and ginger; stir-fry 30 seconds.

  4. Return tofu to skillet; drizzle reserved marinade mixture over. Stir-fry until marinade thickens slightly, about 30 seconds. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with green onions and serve.
