Substitute any kind of meat or vegetables in this recipe: pork tenderloin or beef, napa cabbage, carrots, broccoli, snow peas, green beans, edamame, etc. Adjust vegetable cooking time based on density of vegetable.

Recipe Ingredients for Chinese: Stir-fried Chicken and Zucchini

1/2 lb. chicken (thigh or breast), cut into thin strips
3 T. soy sauce
1 T. sesame oil
1 tsp. brown sugar
2 cloves garlic, minced
2 T. cornstarch
2 T. olive oil
3 green onions, julienned
1 T. ginger root, julienned
1 c. sliced yellow onion
2 medium zucchini, cut in half lengthwise then sliced into 1/4-inch half moons
6 oz. mushroom, sliced
1/4 c. chicken broth (may need a little more)
1 Salt to taste

Recipe Directions for Chinese: Stir-fried Chicken and Zucchini

  1. In a medium bowl, mix the chicken, soy sauce, sesame oil, brown sugar, garlic, and cornstarch together until the chicken is evenly coated.

  2. In a large pan or pot, heat 1 T. oil, half the ginger and half the green onions over high heat. When they begin to sizzle, add the onion, zucchini, and mushrooms; sauté. Sprinkle a little salt to taste. When the vegetables are almost cooked, remove them to a bowl.

  3. Heat (on high) the remaining tablespoon of oil in the same pot and add the remaining ginger and green onions. When they sizzle, add the chicken and sauté until the meat is nearly cooked through.

  4. Pour the vegetables back into the pot and stir together. Add the broth and cook for 1-2 minutes until thickened.

  5. Serve with rice.
