Makes 8 servings



Basic chicken and rice soup. Very thick. Add your choice of meats, green onions, sliced ginger, sauces, etc to spice it up.

Recipe Ingredients for Chinese Rice Porridge (congee)

6 cups chicken broth
1 1/2 cups rice, uncooked
2/3 cup chicken
3 tbsp soy sauce, low sodium

Recipe Directions for Chinese Rice Porridge (congee)

  1. If possible, make your own chicken broth using the carcass of a store-bought roasted chicken. Simmer for a least an hour. (Canned chicken broth works fine too, just heat to boiling and move to the next step.)

  2. Remove carcass. Add rice.

  3. Simmer, covered for 45 minutes or until congee is thickened.

  4. Remove 2/3 cup to 1 cup of chicken from bones and add back into the pot.

  5. Add soy sauce before serving.

  6. Serve with peanuts on the side and any other additions.
