Recipe Ingredients for Chinese Ratatouille

1 tsp olive oil
1 medium onion, chopped
2 tbsp chopped ginger
1 Chinese eggplant, diced
1 medium zucchini, diced
2 cups chopped tomatoes
1 tbsp chopped garlic
1/2 cup chicken stock or vegetable stock
1/4 tsp salt
1 tsp sugar
2 tbsp chopped green onions

Recipe Directions for Chinese Ratatouille

  1. fry all veggies

  2. add chicken stock

  3. simmer for about 20 min

  4. sprinkle chopped green onions when done
