Perfect for a chilly night! A wonderful way to get your protein and vegetables altogether in one big bowl. Even my finicky 8 year old ate it up!

Recipe Ingredients for Chinese Noodle Soup

10 oz. chinese noodles
4 cups diced chicken
1 carrot, diced
3 stalks celery, diced
2 cups edamame
1 cup sliced red bell pepper
29 oz. fat-free chicken broth
4 cups water
1/3 cup soy sauce
1 tbsp. red pepper flakes

Recipe Directions for Chinese Noodle Soup

Saute' chicken over medium heat until no longer pink; set aside. Boil noodles in 4 cups water until soft, about 5 minutes. Add chicken broth, vegetables and chicken to pot. Add soy sauce and red pepper flakes. Simmer for 25 minutes until vegetables are tender. Salt to taste.
