Chinese Fried Rice Recipe

Goes well with sweet and sour turkey balls.

Recipe Ingredients for Chinese Fried Rice

1 cup brown rice
1 medium carrot, peeled and sliced
1 cup frozen peas
1/2 red bell pepper, seeded and diced
2 eggs, lightly beaten
1 salt
3 T vegetable oil
1 small onion
2 T soy sauce

Recipe Directions for Chinese Fried Rice

  1. Cook rice to package instructions.

  2. Steam carrots, peas, and red pepper until tender (about 5 minutes).

  3. Season eggs with salt and fry them in a frying pan with 1 T of oil until thin set as an omelet. Roll up into a sausage shape and cut into thin strips.

  4. Put remaining 2 T of oil into a frying pan and saute the chopped onion until softened. Add the rice and steamed vegetables and cook, stirring, for 2 to 3 minutes.

  5. Add the egg and scallion and cook, stirring, for 2 minutes more.

  6. Sprinkle with soy sauce before serving.
