Recipe Ingredients for chinese eggplant salad

1 lb eggplant
3 serving Light Soy Sauce
1 T balsamic vinegar
1 tsp sriracha
1 T olive oil
1 T ginger
4 cloves garlic, minced

Recipe Directions for chinese eggplant salad

Cut the eggplants into 2 to 3 inch chunks. Quarter those chunks. Steam eggplant for 4 minutes. Let eggplant sit and lower to room temperature. Whisk together remaining ingredients and toss with eggplant.
