Cook's Illustrated chinese chicken salad

Recipe Ingredients for Chinese Chicken Salad

1 head iceberg lettuce
1 medium red bell pepper
1 medium cucumber, peeled
1 medium carrot, chopped
1 1/2 cups chopped chicken breast
1/2 cup scallions
1 tsp vegetable oil
1 tbsp hoisin sauce
3 tbsp rice vinegar
1 1/2 tsp soy sauce
1 tsp ginger

Recipe Directions for Chinese Chicken Salad

  1. Dry chicken with paper towels. Salt and pepper well. Cook in 1 tsp oil for 5 min. Flip and add 1/2 cup water. Cook for an additional 5-10 minutes.

  2. Mix chicken and vegetables together.

  3. Mix dressing.
