Recipe Ingredients for Chinese Chicken and Pepper Stir Fry

2 tablespoons peanut oil
1 yellow onion, sliced lengthwise
1 green bell pepper, seeded, sliced lengthwise
1 large tomato, cut into wedges
1 chicken boullion cube
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons cornstarch
1 tablespoon red pepper flakes, crushed
1 lb cooked chicken breast

Recipe Directions for Chinese Chicken and Pepper Stir Fry

  1. Over medum heat, large skillet or wok, heat oil

  2. Sautee onions, ~4 minutes

  3. Add bell pepper, cook until tender, ~1 minute

  4. Add tomato and bouillon to pan

  5. Add cooked chicken and bring liquid to simmer

  6. Cook 2 minutes

  7. In small bowl, blend soy sauce, vinegar, and cornstarch

  8. Stir liquid into pan, blending well

  9. Sprinkle with red pepper flakes

  10. Cook until sauce thickens, about 1 minute

  11. Serve over rice
