When these are done they are nice when served within the bamboo tray that they were steamed in. Serve with Sweet Chilli Sauce and Soy Sauce on the side

Recipe Ingredients for Chinese Chicken Parcels

1 head Bok Choy
2 cloves Garlic
3 tsps Ginger, about 1 thumb-sized piece
1 Green Onions
10 sprigs coriander
2 Chili Peppers, red
1 tbsp Fish Sauce
20 oz Chicken Thighs, about 4 small
30 g Water Chestnuts
1 1/2 tbsps lime zest, the amount from 2 limes
2 tbsps lime juice, the amount from 2 limes
1 tsp sesame oil
1 dash virgin olive oil
1 tbsp sesame seeds, toasted

Recipe Directions for Chinese Chicken Parcels

  1. Remove and discard the core and outer leaves from the bok choy. Undo the remaining leaves and place them in a pan of salted, boiling water for 2 minutes to soften. Cool them in a bowl of cold water, drain and set aside.

  2. In a food processor, whizz up your garlic, ginger, onions, coriander, chjilli and fish sauce with a good pinch of salt. Then add the chicken, water chestnuts, lime zest and juice as well as the sesame oil and pulse until you have a minced meat consistency.

  3. Place a heaped teaspoon of the flavoured mince onto one end of each cabbage leaf. Fold it up and tuck in the sides, then roll up. Rub a bamboo steamer with a little olive oil and place in the cabbage parcels. Place the steamer over a pot of boiling water and cover. Steam for about 6 minutes.
