Very light and healthy chicken salad recipe

Recipe Ingredients for chinese chicken, Marian recipe

2 cups shredded chicken
1 head lettuce, iceberg
3 cups spinach, raw
4 green onions
1 cup cilantro, chopped
1/2 cup lemon juice
1/2 cup soy sauce
2 tsp. oil, sesame
1/2 cup sliced almonds
1 cup mandarin oranges (canned in water)

Recipe Directions for chinese chicken, Marian recipe

  1. Mix lemon juice soy sauce, sesame oil and 1/4 cup juice from mandarin orange can together for dressing. set aside

  2. chop all other ingredients and toss together

  3. optional: fried maifun noodles, mandarin oranges, sliced almonds

  4. serve with dressing
