Recipe Ingredients for Chinese Aubergine in Garlic Sauce

1 eggplant, chopped in 1 inch dice
1 tsp vegetable oil
6 cloves garlic minced
1/3 cup ketchup
1 tbsp. ginger, minced
2 tbsp sugar
2 tbsp. rice vinegar
1 1/2 tbsp. soy sauce, light
1 tbsp. soy sauce
1 tsp. Chinese chili sauce
3 tbsp. dry white wine or sherry
1/2 cup chopped spring onions (green part only)
1 tbsp. cornflour, dissolved in
1 tbsp water

Recipe Directions for Chinese Aubergine in Garlic Sauce

  1. Fry aubergine (eggplant) in a little spray oil over medium heat for about 8 min. After frying drain well on kitchen paper and set aside.

  2. Fry ginger and garlic in a little oil for about 30 sec. Add ketchup and stir for a minute or so. Add chili sauce and stir well.

  3. Next, add the sherry and simmer for a minute or two.

  4. After this, add all other ingredients except spring onions and cornflour. Stir and allow mixture to simmer for a couple of minutes before adding cornflour mixture.

  5. Just as mixture starts to thicken, add onions, stir for a minute and add aubergine to sauce.

  6. Once coated, remove from wok and serve over white rice.
