Recipe Ingredients for Chin Chin Noodles

1/2 cup peanut butter, chunky
2 cups chicken broth or vegetarian broth
2 1/2 tablespoons minced garlic
2 tsp ginger, minced
2 1/2 tablespoons soy sauce, light
2 1/2 tablespoons red wine vinegar
20 g sambal oelek
2 tablespoons sesame oil
2 tablespoons vegetable oil
1 lb whole wheat spaghetti
1/4 cup green onions, chopped
2 lb chicken thighs, sliced
2 tbsp cornstarch

Recipe Directions for Chin Chin Noodles

  1. Combine 2 tbsp of the sesame oil with the flour and cornstarch until smooth. Coat the chicken pieces with the paste (velveting), and saute the pieces in a little vegetable oil over high heat until lightly browned. You can also skip this step, and just use leftover shredded roast chicken.

  2. Combine peanut butter, broth, garlic, soy sauce, vinegar, sambal oelek, and the rest of the sesame oil in a dish and set aside; then cook noodles according to package directions or until tender, then drain and return to the pot.

  3. Combine the noodles with the sauce and chicken; toss to coat the noodles well; heat through.

  4. Garnish with green onions, and serve; makes 6 servings.
