Use for Charred Ribeye Salad Makes 2/3 cup 6 servings about 2 T. each <2 fat servings (14 g fat per 2 T. serving)

Recipe Ingredients for Chimichurri Sauce

2 cloves garlic, peeled
1 T. capers, rinsed and drained
3/8 tsp. salt
1 black pepper (20 turns)
1/2 c. parsley leaves, packed
1/2 c. oregano leaves, packed
4 tsp. vinegar, red wine
1/8 tsp. red pepper flakes
6 T. olive oil, extra-virgin
3 T. water

Recipe Directions for Chimichurri Sauce

  1. Into a large marble or granite mortar put the garlic cloves, capers, salt and pepper. Pound until smooth. Add the parsley leaves and pound until crushed. Add the oregano and pound until both herbs are pureed finely.

  2. Add the red wine vinegar, red pepper flakes and olive oil and muddle until combined. Add the water and stir to combine. Transfer sauce to a dish for serving. Store in the refrigerator for up to three days.
