Chimichangas made with ground turkey

Recipe Ingredients for Chimichangas

1 lb lean ground turkey
8 tbsp fat free cream cheese
8 oz fat free sour cream
4 tsp taco seasoning mix
4 tortillas
2 cups shredded lettuce
1 1/2 cups salsa
1 cup chopped onion
12 oz fat free shredded cheddar cheese
14 oz canned black beans
6 sprays Pam cooking spray

Recipe Directions for Chimichangas

  1. Preheat oven to 350d

  2. Spray a 9x13 baking dish with Pam cooking spray.

  3. Meanwhile, heat black beans in saucepan over low heat to warm.

  4. Cook ground turkey until no longer pink. Drain as necessary.

  5. Add taco seasoning packet and water to ground turkey as seasoning package indicates.

  6. Spread each tortilla with 2 tbsp of fat free cream cheese.

  7. Add ground turkey mixture, black beans, and chopped onion to each tortilla. You can also add veggies such as bell peppers, corn, green chilis, zucchini or others as you would like.

  8. Roll each tortilla and place (seam side down) in baking dish.

  9. Spray the top of each chimichanga with a spray of Pam cooking spray.

  10. Bake for 10 minutes (or until browned and crunchy.

  11. Remove from oven and top with shredded cheese.

  12. Bake for a few more minutes until cheese melts.

  13. Remove from oven and serve with shredded lettuce, salsa, and sour cream.

  14. You can also serve with Spanish rice if desired.
