Don't know if thats how you spell that...but I made this recipe up after I got so angry that prepacked taco mix had so much sodium in it!!

Recipe Ingredients for Chimichangas

1/2 lb ground beef
8 oz stewed tomatoes
1 oz sliced olives
1 1/2 tbsp cilantro
4 flour tortillas
1 cup water
1 small onion
1/8 cup cheddar cheese
2 oz fat free sour cream

Recipe Directions for Chimichangas

  1. Brown Beef, drain

  2. brown onion (and jalopenos if desired) in pan

  3. Once onion is browned, put ground beef back in pan

  4. Add water, cilantro and 1/2 can of stewed tomatoes, I blend 1/2 the can of tomatoes with the cilantro in a magic bullet to make the mixture easier to cook with.

  5. Heat until a nice thick consistancy is acheived.

  6. Divide meat equally into the four tortillas, fold tortillas over and put left over stewed tomatoes, cheese, and olives on top.

  7. Bake at 350 until cheese is melted. (if using a metal baking pan, you should use some cooking spray to avoid sticking)
