Definately not low cal, but its the one way to make sure left over roast disappears! Very Easy.

Recipe Ingredients for Chimichangas

4 lb chuck roast
1 lb cheddar cheese
16 oz salsa
12 flour tortillas, 12"
2 cups Canola Oil

Recipe Directions for Chimichangas

  1. Heat shredded roast (whichever kind you used) in skillet with salsa.

  2. Scoop meat onto center of tortilla, add cheese.

  3. Roll tightly, tucking ends in securely. Secure with toothpick.

  4. Fry until golden brown.
