Vegetarian adaptation of a Weight Watcher's recipe

Recipe Ingredients for Chimichangas

720 cal Multi Grain Tortillas
242 grams Veggie Ground Round Original
14 oz Old El Paso Refried Beans w/ Green Chiles
3 tbsp Extra Chunky Salsa Mild
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 tsp Chili Powder
68 grams blue menu light cheddar cheese
0.25 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
0.5 medium (2-1/2" dia) Onions

Recipe Directions for Chimichangas

  1. Heat all but cheese and tortillas in a skillet. Stir in cheese.

  2. Spray a pan with cooking spray and preheat oven to 350.

  3. Place 3/4 cup bean mixture in centre of tortilla and roll up. Place seam-side down in pan.

  4. Bake 20 mins or until golden and crispy. Top with additional salsa and sour cream, if desired.
