Recipe Ingredients for Chilli Roasted Vegetable and Couscous Salad

50 g chilli, red
225 g (8oz) couscous
1 red pepper
1 yellow pepper
1 green pepper
1 red onion
250 g aubergine, small
1 tsp lemon juice
2 garlic cloves
4 ripe tomatoes
4 tbsp red wine vinegar
1 tbsp mustard, wholegrain
1 tbsp clear honey
1 tbsp olive oil
1 salt and pepper
1 tbsp rosemary

Recipe Directions for Chilli Roasted Vegetable and Couscous Salad

  1. Preheat the oven to 200C, 400F, gas mark 6.

  2. Halve and deseed the peppers, and cut into thick wedges. Place on a large baking sheet.

  3. Peel the onion and cut into thick slices, toss in the lemon juice and then place on the baking sheet.

  4. Slicen the aubergine.

  5. Add to the other vegetables.

  6. Halve and deseed the chill and then chop finely.

  7. Peel the garlic and slice thinly.

  8. Sprinkle the chilli and garlic over the vegetables and spray with low cal oil

  9. Mix well to coat and then top with some rosemary.

  10. Bake in the oven for 25 minutes. Meanwhile quarter the tomatoes.

  11. Turn the vegetables and lay the tomatoes on top.

  12. Continue to cook for a further 5 minutes until tender.

  13. Meanwhile, just before the end of cooking, soak the cous cous according to the manufacturer?s instructions.

  14. Whilst the couscous is soaking, mix together the olive oil with the vinegar, mustard and honey.

  15. Season well and place in a small saucepan, set aside.

  16. To serve, drain the vegetables and transfer to a heatproof bowl and mix in the couscous. (Vegetables can be chopped finer for picnic/buffet food).

  17. Allow to cool if preferred.

  18. Heat the dressing until hot, without boiling.

  19. Combine the salad with the hot dressing.
