Tasty Relish ideal with pasta as a lunchbox meal, add ham, cheese or chorizo or accompaniment of your choice. Can use chilli flakes if fresh chillies are not available.

Recipe Ingredients for Chilli Relish

6 Medium Tomatoes
1 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 clove Garlic
2 tbsp Olive Oil
1 tsp Cinnamon, Ground
1 oz Chilli
1 tsp Ginger, Ground
1 tsp Salt, Table
0.5 tsp Pepper, Black
75 grams Natural Light Brown Muscovado Sugar
5 Tablespoon Cider Vinegar
1 tsp, ground Basil, Dried

Recipe Directions for Chilli Relish

  1. Place tomatoes in a jug of boiling water for a few minutes to remove their skins, then roughly chop.

  2. Roughly chop onion, red pepper, chilli and garlic. Gently heat the oil in a pan. Tip in the onion, red pepper, chilli and garlic, stirring lightly.

  3. Cook gently for 5-8 minutes, until the pepper has softened. Add the chopped tomatoes, cover and cook for 5 mins.

  4. Stir in the cinnamon, (chilli flakes if using), ginger, salt, pepper, sugar and vinegar. Bring gently to the boil, stirring until the sugar dissolves.

  5. Simmer, uncovered for 20 mins, until the mixture is pulpy. Stir in the basil and seasoning.

  6. Allow to cool completely, then spoon into a jar or a plastic tub with a tightly fitting lid. Store, covered, in the fridge. This relish will keep in the fridge for up to 2 weeks. Stir before using.
