Recipe Ingredients for Chilli con carne

1 tsp oil
3 onions
1 red pepper
1 green pepper
2 garlic cloves
400 g minced beef
450 ml beef stock
1 tsp chilli powder
15 oz kidney beans
400 g chopped tomatoes
1/2 tsp cumin
1 tsp salt
1/2 tsp pepper
4 tortillas
4 tsp sour cream

Recipe Directions for Chilli con carne

  1. Heat the oil in a heavy bottomed saucepan. Add the onions, peppers and garlic and gently fry until soft.

  2. Blend in the stock and add the chilli powder, beans, tomatoes and cumin. Seasons with salt and pepper.

  3. Bring to the boil, then cover, reduce the heat and simmer very gently for 50-60 minutes, stirring occasionally.

  4. Serve the chilli with soft tortillas, accompanied by sour cream and fresh coriander.
