Recipe Ingredients for Chilli Chicken rice served with side salad and greek yogurt

1 serving Chillies
200 grams Chicken, Leg, Meat Only
1 Can Beans
1 slice, large (1/4" thick) Onions

Recipe Directions for Chilli Chicken rice served with side salad and greek yogurt

Fry (light) off the chicken. Place in a pan and add 250 ml of boiled water. Add 4 tomatoes, diced onion, and a table spoon of tomato puree. Bring to the boil and simmer. Add a table spoon of cumin, 1.5 tsp of coriander powder, crushed garlic (4 cloves), and a good pinch of chilli seeds. Simmer for 20 mins. Stir often and pulp with a potato masher for finer tomatoes. Add tinned kidney beans and simmer for a further 20 mins. Boil the rice and add the one cup to the pan. Serve with rocket, cucumber and a tablespoon of tzatziki.
