Chilli with Beef Recipe

Traditional chilli made from dried red beans. Best served in winter with fresh home made corn bread.

Recipe Ingredients for Chilli with Beef

45 oz diced tomatoes (3 cans)
3 large onions (chopped)
6 cloves garlic
18 oz tomato paste (3 small cans)
1 tablespoon chilli powder
3 cups dried red beans
12 cups water
16 oz lean ground beef
1 tablespoon baking soda
1 tablespoon soy sauce

Recipe Directions for Chilli with Beef

  1. Wash red beans in water and baking soda until the water runs clear to wash away any dirt remaining on the beans.

  2. Put beans in stock pot on stove and add water.

  3. Bring water to a boil and then turn down to medium low to simmer for 30 minutes.

  4. Chop onions and garlic while the beans are cooking.

  5. Add onions, garlic, tomato paste, chilli powder, and diced tomatoes to slow pot cooker.

  6. Transfer beans and water to slow pot cooker.

  7. Put ground beef in stock pot to brown.

  8. Sprinkle ground beef with soy sauce.

  9. Brown ground beef in stock pot with soy sauce, breaking the beef into tiny pieces with spatula while it cooks.

  10. Add browned ground beef to slow pot cooker.

  11. Set slow pot cooker to auto and allow to cook covered for 6-8 hours or until beans are soft.
