A refreshing chilled cucumber and yogurt cold soup.

Recipe Ingredients for Chilled Yogurt Cucumber Soup

1/2 cup currants
3 1/2 cups plain yogurt
1 hard boiled egg
1 cup cucumber
4 scallions
2 tbsp fresh dill

Recipe Directions for Chilled Yogurt Cucumber Soup

Soak the currants in cold water for 5 minutes. Place 2 cups of yogurt in a large bowl, and mix with yogurt cheese (1.5 cups of yogurt calories). Add one cup of ice water and stir till blended. Drain the currants and add them to the yogurt mixture along with the chopped egg, cucumber, scallions, and salt and pepper to taste. Stir in 6 ice cubes and chill for 2-3 hours. Serve Cold.
