Recipe Ingredients for Chilled Tomato & Vegetable Pasta Salad

12 oz rotini, tri-colored
14 1/2 oz diced tomatoes, (1 can) drained
1 cucumber, diced
3 4/5 oz ripe olives, (1 can) sliced and drained
1/2 cup shredded carrots
1/2 cup chopped roasted red peppers
1/2 cup fat free italian dressing
3 tablespoons shredded parmesan cheese
1/4 cup pine nuts, toasted

Recipe Directions for Chilled Tomato & Vegetable Pasta Salad

Cook pasta according to pkg directions; drain. Rinse in cold water. Place in large bowl. Add tomatoes, cucumbers, cheese, olives, carrots and bell peppers and mix lightly. Add dressing to coat. Cover. Chill at least 1 hour prior to serving. Sprinkle with pine nuts, if desired.
