Tomato based soup with quinoa served cold.

Recipe Ingredients for Chilled summer style soup

400 g chopped tomatoes
1/2 cucumber
1 red pepper
100 g quinoa
300 ml vegetable juice
400 ml stock
1 tbsp lemon juice
1 tbsp olive oil

Recipe Directions for Chilled summer style soup

  1. Simmer the quinoa in the stock until cooked.

  2. Put all other ingredients in a blender and blend until smooth.

  3. Once the quinoa is cool, stir into the soup and serve.
