Recipe Ingredients for Chilled Spicy Tomato Corn Soup

2 medium tomatoes
4 cups tomato juice
2 tsp honey Dijon mustard
2 tbs Worcestershire sauce
1 stalk celery, finely minced
2 tbs dill, minced
2 scallions, finely minced
2 ears corn

Recipe Directions for Chilled Spicy Tomato Corn Soup

  1. 1) Cook the 2 corn ears in boiling water for 12 minutes. When done, cool and cut corn from cob.

  2. 2) Bring a medium sized saucepan-full of water to a boil, then lower the heat to a simmer. Core the tomatoes, and drop them in the water for about 20 seconds. Remove from the water and pull off the skins. Cut the tomatoes open, and squeeze out and discard the seeds. Mince the remaining pulp and set aside.

  3. 3) In a medium-large bowl, whisk together the tomato juice, mustard, horseradish, Worcestershire sauce and 12 drops of Tobasco until well mixed. Stir in remaining ingredients (including the minced tomatoes and corn), seasoning to taste with freshly ground black pepper.

  4. 4) Cover tightly and chill until very cold.
