Recipe Ingredients for Chilled Espresso Custard

2 large Egg, Whole
1 1/2 cup Milk, Nonfat, Fluid
1 1/2 oz No Calorie Sweetener
2 tsp dry Coffee, Instant, Regular, Powder
1 tsp Vanilla Extract
1 tsp Cinnamon, Ground

Recipe Directions for Chilled Espresso Custard

  1. Whisk the milk, eggs, sugar substitute, espresso powder or coffee, and vanilla extract until well-blended.

  2. (note - original recipe calls for 1% milk and espresso powder OR instant coffee)

  3. Pour into four 6-ounce custard cups or ramekins and place in a 10" skillet.

  4. Fill the skillet with water to 1/2" from the tops of the custard cups.

  5. Bring the water to a boil over high heat.

  6. Reduce the heat to low, cover, and simmer for 10 minutes.

  7. Remove the cups from the skillet, cover with plastic wrap touching the surface of the pudding, and refrigerate for 3 hours, or until chilled.

  8. Garnish with the cinnamon.
