Chilled summer soup with cucumbers and avocados

Recipe Ingredients for Chilled cucumber/avocado soup

2 cucumber+8-1/4" cucumbers
3 green onions
1 clove garlic
8 oz. Greek yogurt
4 oz. fat free half and half
1/2 teaspoon dried dill
1/4 teaspoon salt

Recipe Directions for Chilled cucumber/avocado soup

  1. Peel, deseed and chop cucumbers. Place in blender. Chop onions. Add to blender. Peel garlic and add to blender. Peel and chop avocado and add to blender. Add yogurt, half and half, dill, and salt.

  2. Blend until smooth.

  3. Chill, then serve. You may want to garnish with fresh parsley, spring of mint, or thin slice of cucumber.
