Recipe Ingredients for Chilled Avocado Soup

2 avocados, pealed
1 onion, sliced
1 yellow pepper, sliced
2 T. olive oil
2 cloves garlic, minced
2 c. 2% milk

Recipe Directions for Chilled Avocado Soup

  1. Add oil, onions and pepper to saute pan

  2. Cook on medium heat until onions are translucent

  3. Add garlic and saute briefly

  4. Put onion mixture in blender w/ avocados and puree

  5. Gradually add milk and puree until smooth

  6. Add salt and pepper to taste
