Recipe Ingredients for Chilies Rellenos casserole

3 pepper Anaheim Chile
1 cup Cheese
2 oz Cheese
0.75 cup Egg Beaters
0.25 cup Milk, Lowfat, Fluid, 1% Milkfat
0.33 cup Whole Wheat Flour

Recipe Directions for Chilies Rellenos casserole

  1. Preheat oven to 450F. Spray a 2qt casserole dish with cooking spray. Quarter chilies, removing seeds, stems, and veins. Immerse peppers in boiling water for 3 mins; drain well on paper towels. Place peppers cut side up in prepared baking dish. Top with cheeses.

  2. In a medium bowl combine eggs, milk, flour, baking powder, cayenne and salt. Beat with a rotary beater, blender or food processor until smooth. Pour egg mixture over chilies and cheeses.

  3. Bake about 15 mins or until knife inserted into egg part comes out clean. Let stand 5 mins before serving.
