Chilied Salmon Recipe

Lots of veggies, heart-healthy salmon and firery chili powder!

Recipe Ingredients for Chilied Salmon

1 tbsp olive oil
1/2 cup red onion, chopped
2 1/2 tspn chili powder
10 oz frozen corn
1 red bell pepper
1/4 cup fresh cilantro, chopped
24 oz salmon fillets

Recipe Directions for Chilied Salmon

Preheat oven to 450. Heat oil over medium heat in a 10" ovenproof skillet. Put onion in skillet and cook, stirring for about 2 minutes. Add 1.5 tspns of the chili powder and stir. Add remaining vegetables and stir till no longer icy; 2-3 minutes. (Use frozen bell pepper strips found in the frozen veg section of the market - CC did not locate that item for me). Add cilantro and stir. Sprinkle remaining teaspoon of chili powder on fish. Place fish, chili-side-up on veggies. Season with salt & pepper to taste. Place in oven 12 minutes (for a 1" thick fillet).
