Use 95% lean ground beef - you can also rinse the beef after cooking it to remove fat.

Recipe Ingredients for Chili - very lean

1 lb. cooked lean ground beef
2 lbs. dry pinto beans
1 large onion
3 cloves garlic
3 tbsp. chili powder
1 tbsp. cumin
1 tbsp. pepper
1 tsp. cayenne powder
2 tsp. salt
28 oz. canned tomatoes
1 can tomato paste

Recipe Directions for Chili - very lean

  1. Cover beans with water about 2 inches over them, bring to a boil, then turn off and let set for an hour.

  2. Drain the beans, cover them again as before, bring to a boil.

  3. Reduce heat, and simmer for 2-3 hours until tender.

  4. Cook beef, add onions, garlic, cook until they are translucent.

  5. Add beef mixture to beans, add spices and salt.

  6. When beans are good and tender, add tomatoes and simmer another 20 minutes or so.
