Chili Verde, slight modification from Chili Lovers cookbook

Recipe Ingredients for Chili Verde

30 oz Pork
1 large Onions
3 tbsp Olive Oil
3 clove Garlic
28 oz Diced Tomatoes
8 oz Diced Green Chilies
2 tsp Chili Powder
1/2 tsp Cumin
1 cup water

Recipe Directions for Chili Verde

  1. Cut pork into bite size pieces.

  2. Chop onion, and mince garlic.

  3. Cook onion and garlic in large pan in 1 Tbl olive oil. Remove from pan and place in crock pot.

  4. Brown pork in remaining olive oil until browned on all sides.

  5. Add to onion garlic mixture.

  6. Add tomatos, chilis, and spices.

  7. Add 1 cup water.

  8. Cook in Crock pot until pork is tender and will flake to pressure.

  9. Refrigerate overnight. Reheat, thicken with flour/water mixture if desired.

  10. Serve.
