A south american inspired dish that I added tempeh to.

Recipe Ingredients for Chili Squash

2 medium squash
1/2 medium onion
1 clove garlic
1 medium tomato
1 poblano pepper
6 medium mushrooms
1 tsp cumin
1/8 tsp marjoram
1/4 tsp
2 tsp hot sauce

Recipe Directions for Chili Squash

  1. Boil water. Add thinly sliced squash. Boil for 5 mins to blanch.

  2. Heat pan and spray with oil. Add chopped garlic, onion, and pepper. Cook on medium high until semi-soft.

  3. Add thinly chopped tomato and sliced mushrooms.

  4. Stir well.

  5. Drain squash well and add to veggies. Stir.

  6. Add spices, stir, remove from heat.
